Chef Dave began his chef journey under Michael Rafidi while at RN74. Chef Rafidi, whose brain-child Albi showcases the al-Masriq region (Lebanon, Syria, Palestine & Israel), introduced Dave to mixing sweet and savory ingredients for intoxicating results. 

To meet his goal of creating a vegan cookie indistinguishable from its counterparts, chef reached into the deep well of flavors available in the Levant.

Chef's Notes:

• Incorporated dark tahini to maintain a softer texture with great aroma
• Added the finest Italian espresso to add bitter notes with depth
• Sprinkled with candied sesame and espresso salt to add pop
