We can confirm that chocolate factories really are as magical as they seem in the movies. We had the pleasure of visiting our friends at Fine & Raw in Bushwick. One of the reasons we love using Fine & Raw chocolate is the depth of flavor. The chocolate we use involves half of the beans being roasted and half left raw. This creates a whole new layer of flavor and mimics our process with other ingredients like butter (half browned & half raw). Fine & Raw is extremely transparent about their supply chain, and works directly with small cacao farmers in Ghana and Ecuador. When they receive the cacao beans, they are turned into nibs and put into a melanger for three days until ground. Then it’s tempered, mix ins are added, and it’s and turned into the creamy delicious chocolate bars we know and love.
