It’s no secret hand chopping ingredients like pecans and chocolate adds a variety of textures to our cookies. What you may not know is that we chop our chocolate three different ways. Specifically for our first child, The OG. We receive our chocolate (from Valrhona) in an oval shape, we leave half of it just like that, to achieve big beautiful glossy puddles of chocolate. The rest is chopped in two different directions to add fine flecks and long fragments to the cookie, ensuring each bite is met with chocolatey goodness.
